Tim Jen and Min Chen revive Tainan’s spirit through innovative restaurant design

Located in the heart of Tainan, Izakaya 9am 5pm by Tim Jen and Min Chen reimagines a historic building as a contemporary dining space, celebrating the city’s rich cultural heritage while embracing modern design sensibilities.

Tainan, often regarded as Taiwan’s most historically significant city, serves as the backdrop for Izakaya 9am 5pm. The design draws inspiration from the city’s layered past, with the intention of connecting the restaurant’s identity to local culture. Original materials are showcased in their raw forms, creating a sense of spatial depth and authenticity that echoes Tainan’s rustic charm. This approach not only preserves the building’s historical essence but also infuses it with renewed vitality, making the space both timeless and contemporary.

At the heart of the restaurant lies a handcrafted concrete bar counter, a central element that anchors the entire space. The creation process involved the owner, who participated in chiseling the concrete after it was poured. This collaborative act deepens the connection between the owner, guests, and the environment, fostering a sense of belonging. The bar is framed by untreated copper plates and raw walnut veneer, materials chosen for their ability to evolve over time. This natural aging process serves as a metaphor for Tainan’s unique culture, shaped by centuries of change and adaptation.

The design skillfully balances old and new, retaining the building’s original green exterior tiles and gray marble flooring while introducing walnut veneer and gold copper accents. These contrasting elements create a harmonious interplay of colors and textures, ensuring the restaurant stands out in Tainan’s alleys without disrupting the historical streetscape. The thoughtful integration of materials and preservation of original features highlight the designers’ commitment to context-sensitive design.

Functionality is a key consideration in the layout. The first floor is dedicated to dining and kitchen operations, while the second floor offers private dining rooms. Staff areas and storage are located on the upper levels, ensuring a seamless flow that separates customer and staff movements. This arrangement enhances the dining experience by minimizing disruptions and maintaining a tranquil atmosphere for guests.

The design process was not without challenges. Integrating contemporary elements with the building’s existing structure required innovative solutions. The use of high-brightness blue on the staircase wall introduces a dynamic visual break, countering monotony and adding vibrancy. Feature wall lamps and the hand-hewn bar further enliven the space, demonstrating the designers’ attention to both aesthetics and comfort.

Izakaya 9am 5pm stands as a testament to the power of thoughtful design in bridging history and modernity. By honoring the past and embracing the future, Tim Jen and Min Chen have created a space that resonates with both locals and visitors, earning the project a prestigious Silver A' Design Award in 2025.
