Norihiko Terai’s vision for Teru Sushi goes beyond conventional dining, introducing a theatrical concept that elevates both space and experience. Upon entering, guests embark on a tea ceremony-inspired passage, setting the stage for anticipation and discovery. This approach draws from centuries-old Japanese rituals, yet reimagines them for contemporary audiences seeking more than just a meal.
The restaurant’s interior is a harmonious fusion of traditional craftsmanship and modern design. Black-toned walls, warm earthen textures, and Italian tiles create a tactile and visual richness. At the heart of the space lies a circular counter, reminiscent of a stage, where diners are invited to observe the chef’s artistry up close. This layout not only fosters intimacy but also transforms each meal into a performance, with every seat offering a front-row view.
Material selection is central to the restaurant’s unique atmosphere. The entrance features ash and wood, guiding guests toward the main dining area. Surrounding the counter, hand-crafted ceramic tiles pay homage to the Mino pottery tradition, while polished stone surfaces reflect the venue’s commitment to luxury and authenticity. Lighting is carefully orchestrated to highlight both the cuisine and the chef’s skills, ensuring that every detail is part of the immersive experience.
Research into customer preferences and spatial design informed every aspect of Teru Sushi’s renovation. Studies revealed a growing demand for dining as entertainment, leading to the integration of stage lighting, dark tones, and natural materials. The circular counter and open performance concept were specifically chosen to enhance guest engagement, transforming the act of dining into a communal and interactive event.
Overcoming challenges such as limited space and the need to balance tradition with innovation, Norihiko Terai’s design introduces a new paradigm for luxury restaurants. The result is a space where craftsmanship, culinary artistry, and sensory presentation converge, offering a memorable journey that resonates with both local patrons and international visitors. Recognition for this achievement came in the form of the Silver A' Design Award in 2025, celebrating Teru Sushi’s excellence in interior and experiential design.
Teru Sushi stands as a testament to the power of thoughtful design in redefining cultural experiences. By merging the artistry of Japanese tradition with the excitement of modern theater, the restaurant invites guests to savor not only exquisite cuisine but also the spectacle of its creation.
