The inception of Sushi Koji was deeply influenced by the personal journey of its chef, a seasoned artisan with a history in renowned establishments. The designers sought to encapsulate his warmth and dedication to the culinary craft, resulting in a space that matures with grace, much like a fine wine. The restaurant's intimate setting, with an exclusive 8-seat counter, fosters a connection between the chef's artistry and the patrons' sensory indulgence.
Distinctive in its approach, Sushi Koji stands out with its commitment to natural materials. The designers' innovative use of scrap ginkgo wood for the countertop, which also finds purpose in sushi boards and cutting boards, exemplifies a sustainable ethos. The interior's organic feel is further enhanced by chairs that celebrate the wood's natural grain, walls adorned with bespoke Washi paper, and maple signboards with an iron mordant dye, creating a serene, eco-conscious environment.
The realization of Sushi Koji's design is a testament to traditional craftsmanship. Handmade Washi paper graces the walls, incorporating mulberry and gofun to create organic textures. The custom-cut countertops and cypress chairs, assembled with robust double mortise and tenon joints, speak to the durability and authenticity of the materials. This meticulous attention to detail ensures that each element of the restaurant's design contributes to a cohesive and inviting atmosphere.
Despite its compact 24 square meter floor space, Sushi Koji's design maximizes functionality without compromising on aesthetics. The fan-shaped counter optimizes seating arrangements and, together with the curved wall, guides guests through a transformative journey from the entrance to their seats. The design's intelligent use of "ma," the Japanese concept of negative space, allows the restaurant to feel more spacious than its physical confines suggest.
Ryuji Kojo and Toshihiro Obata's design philosophy extends beyond the physical space, encompassing a holistic brand experience. From signage to business cards, each touchpoint is carefully curated to reflect the sushi chef's vision and ethos. This comprehensive approach to design as branding ensures a consistent and immersive experience for every guest.
In conclusion, Sushi Koji is not just a restaurant; it is a living design statement that celebrates the harmony between material, space, and culinary excellence. The thoughtful integration of natural elements and the chef's personal narrative has culminated in an award-winning space that is both a feast for the eyes and the palate. As Sushi Koji continues to age gracefully, it will undoubtedly remain a testament to the power of design in creating meaningful human experiences.
