Revolutionizing Restaurant Service: The Km31 Trolley

Patrick Sarran’s Award-Winning Multifunctional Trolley

In a world where design meets functionality, Patrick Sarran's Km31 trolley stands out. This multifunctional piece, born from the desire to enhance restaurant service, is a testament to innovative design and practicality.

Patrick Sarran, the designer behind the Km31, found his inspiration after creating the Keza, a single-function cart. He envisioned a multifunctional trolley with an extendable top that could navigate the narrow aisles of restaurants with ease. This vision led to the birth of the Km31, the second product in the K Series, a range built using shared components.

The Km31's unique properties lie in its dimensions and functionality. Its size allows it to move effortlessly through restaurant aisles. The top of the trolley can be extended for various purposes, such as cutting large fish, setting crepes alight, or presenting an anniversary dessert. The trolley can also be lined up with others for buffet service, opening up a world of possibilities for restaurateurs.

The Km31 is manufactured on a small scale. Its structure is made of solid beech, while the top is crafted from a waterproof, scratch-resistant solid surface. The trolley's technical specifications include overall dimensions of 620 x 880 x 620 mm, and an extended cheese box dimension of 1090 x 880 x 620 mm.

Interacting with the Km31 is a breeze. It is easy to push and open, and both hands must be used simultaneously to lower the flaps, ensuring safety. The design project took place in Toulouse in 2012, with Sarran noting that fine restaurants lacked trolleys with a contemporary design. This observation sparked his interest in creating a multifunctional trolley that would meet the needs of restaurateurs.

Designing the Km31 was not without its challenges. Sarran faced difficulties in finding a modest piece of ironmongery for the reclinable hinge folding support for the flaps. After finally finding the right piece, he had to order 100 pieces with the special finish he needed before receiving the first order. Fixing these hinges under the thin solid surface also proved challenging.

The Km31 is not just a trolley; it is a testament to innovative design and practicality. It was awarded Silver in the A' Furniture Design Award in 2017, a testament to its outstanding design and innovation. The award is given to top-of-the-line, creative, and professionally remarkable designs that showcase a remarkable level of excellence and introduce positive feelings, amazement, and wonder.
